🤩Buttery Vindaloo Curry🤩

One of my absolute favorite warm-tummy dinners to have when I need a bit of comfort is curry. I love all types of curry; Thai, Indian, Jamaican, Trinidadian... etc. they’re all absolutely delicious. This specific curry dish is an extra buttery Vindaloo style Indian curry with mixed bell peppers and lemon pepper white rice.


If you’d like to have an extra thick cream, I suggest making the coconut cream about 30 minutes before making the curry.

To prepare the coconut cream, you will need:


Whipped Coconut Cream-

13oz of Coconut Cream (canned, unsweetened)

13 oz of Coconut Milk (unsweetened)

1/2 Tsp of Sea Salt


Add the ingredients into a mixing bowl and hand-mix for 3 minutes. Allow the mixture to sit for at least 15 minutes before cooking.


Lemon Pepper Rice-

Prepare your rice, white or brown. I have a rice cooker, so I just add two cups of rice and then add my water until it’s two inches deeper than the rice. That allows for a perfect consistency. It’s not exactly a perfect measurement, but it’s what I learned from watching my grandma so let’s go with that. It comes out perfect and fluffy.


Add 1 tsp of lemon pepper seasoning, 1/4 cup of lemon juice, and 1 tbsp of olive oil to a bowl and mix it well. Once the rice is cooked, add the lemon pepper mixture to your rice and toss, coating your rice well.


Curry-

2 Cans of Chickpeas

1 Cup of Sliced Mixed Bell Peppers

1/2 Cup of Chopped Yellow Onion

1/2 Cup of Plant Butter

1 Tsp of Chili Powder

1 Tsp of Turmeric

1 Tsp of Mustard Powder

1 Tbsp of Garlic Powder

1 Tbsp of Cayenne

1 Tsp of Paprika

1 Tsp of Ginger

1/2 Tsp of Cumin

1/2 Tsp of Cinnamon

Your whipped coconut cream mixture


Add the coconut cream mixture and your butter into a sauté pan on medium-high heat. Drop in the can of chickpeas, sliced mix bell peppers and yellow onion. Add in your seasonings and stir for about a minute. Allow to cook on medium-high heat for 15 minutes, and then keep on low for about 15 minutes, stirring occasionally.


You are now free to enjoy your delicious Cheat Meal.
