The Harmless Scrambled âEggâ comes from a time when Just Egg was $7.99. Itâs for the day when youâre craving a less âegg yolk onlyâ flavor. Itâs for the day you want to make a dare I say ~healthier~ mock âeggâ.
Now, I love Just Egg. I love the folded Just Egg, the regular Just Egg. I love that the option is available to me. However, for some reason. I do not crave it much. I do however crave these tofu scrambled eggs that fill up my tummy much easier and for whatever reason it may be, give me more energy to start my day.
Besides, I love being able to make things from scratch most of the time rather than buying the ready-made version.
This just allows for us to have another option available for a quick(ish), easy, accessible, inexpensive, and most importantly INDULGENT breakfast.
For this recipe, you will need:
8oz of Silken Tofu
2oz of Firm Tofu
2 &1/2 Tbsp of Nutritional Yeast
2 Tbsp of Soy Milk
1 Tbsp of Turmeric
1/2 Tsp of Fine Sea Salt
3-4 Turns of Fresh Ground Black Pepper (LOL)
1 Tsp of Rice Flour
1/2 Tsp of Onion Powder
Plant Butter
Any veggies and/or cheese you would like to add...

Simply process all ingredients besides the veggies in a food processor or blender until smooth.
Lightly sauté your veggies in a pan, cooking until almost completely softened.
Using plant butter, grease up a non stick pan and heat to medium. Pour in your âeggâ batter and allow to cook until they begin to firm up.
It might resemble a pancake.

Begin to scramble the egg up, and add in your veggies and cheese. Cover pan and allow to cook for 5 minutes or so, and then stir again and cook for about 4-5 more minutes (when the egg doesnât look âwetâ anymore, itâs done!)
Serve with your favorite sides or turn it into a sandwich!
