🦀The Qurab Cake Sandwich🦀

I really feel like a “Crab Cake” combined into a sandwich practically screams “SUMMMMMMERRRRTIME”. Don’t you think so?


With the right amount of zest, this super flavorful sandwich will have you stuffed to the gills while still achieving that summertime freshness.

I love crab cakes. I love them with salads, I love them with pasta, I love them as a sandwich, and I love them by themselves. However, I am Vegan, so naturally I am not sitting around eating an innocent little crab. These are Crab inspired Qurab Cakes.


The seasonings that I use in these cakes are designed with the intention of using them in a sandwich. I do have a different recipe for a more traditional, fancier cake that I will be posting at a later date. With that being said, let’s get into the good stuff. Here’s the recipe:


Lemon Pepper Mayo:

1/2 Cup of Vegan Mayo (I used Follow Your Heart, the Original)

4 Tbsp of Lemon Juice

1 Tsp of Lemon Pepper Seasoning

A SPLASH of Vinegar (think, less than a teaspoon)


I suggest making the lemon pepper mayo while your Qurab Cakes are baking in the oven. All you need to do is mix the ingredients in a bowl until everything is evenly distributed. You want it to be nice and thick. Add more mayo if desired. Feel free to add extra fresh ground black pepper if you’re into that. This is all about you. Cater to your flavor palette.


Qurab Cake:

1 Can of Whole Hearts of Palm

1 Can of Artichoke Hearts

1/2 Cup of Plain Bread Crumbs

1 Tbsp of Nori Flakes (if you can find them, if not you could try looking for some sheets of seaweed & shredding a little bit up)

1 Tbsp of Pickle Juice

1 Tbsp of Sriracha

1 Tsp of Old Bay Seasoning

Zest of an average sized lemon


Other ingredients:

Kaiser Rolls (or whatever you have on hand, but I used a Kaiser Roll)

Tomato Slices (2 per sandwich is a good ratio)

Pickles (if you feel inclined to do so)

Frying Oil of Choice (enough for a shallow fry)


This recipe will make enough for 4 decently sized sandwiches.


To begin, put the artichokes & the heart of palm into a food processor and then add the nori or seaweed. Process until it becomes chunky. It should resemble somewhat like shredded fish.

Add all of your ingredients from the food processor into a big bowl, following with the rest of the Qurab Cake ingredients.


Before you get your hands dirty, preheat your oven to 400°!!!!!!!


Now, use your hands to mix everything together evenly. Form your cakes, you want them to be about the size of your palm and about an inch and a half in width.


Place the Qurab Cake patties on a non-stick baking sheet & put them in the oven to bake for 12 minutes.

You should start making your mayo & get your toppings sorted out while they bake.


Once the timer comes down to one minute left, heat your oil and bring it to a medium-high. Take your cakes out of the oven, but go ahead and throw your buns in the oven for a minute or two to toast them up a little if you’d like.


Fry the cakes on each side until they get a nice and crisp golden colored crust.


Go crazy. Make your sandwich. Slather that mayo on your bread, layer on your toppings, and dig in!
